Pimento & Cheese

Okay, so I need a little help. I seem to be having a craving for pimento and cheese. I have to have some dental work done today and know that my mouth is going to be sore and thought this would be a soft thing to eat. I've actually never made pimento and cheese and have found so many different recipes. Does anyone have a family favorite?

oh! I have a great recipe. I'm actually making a big batch to take to the beach this coming week. It's a bit spicy, but oh so yummy. Call me and I will give it to you. If you like it, you can post it for everyone to enjoy. Might not fit in the comments section.

This the the one in this months Southern living that I made and it was good...(I use turkey bacon and light mayo though)
Ingredients
4 bacon slices
2 (8-oz.) blocks sharp Cheddar cheese, shredded
1 (4-oz.) jar diced pimiento, rinsed and drained
1/2 cup mayonnaise
2 tablespoons finely chopped onion
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon ground red pepper
1/8 teaspoon pepper
Preparation
1. Cook bacon in a large skillet 4 to 5 minutes on each side or until crisp; remove bacon, and drain on paper towels. Crumble bacon. Stir together bacon, cheese, and remaining ingredients just until blended. Store cheese mixture in an airtight container in refrigerator up to 1 week

Enjoy!
